This easy flapjack recipe is not just easy to make, it’s quick as well. Make your pick from the delicious sweet and savoury serving ideas below. They are guaranteed to wow your guests.

If you prefer a denser flapjack (like we do), omit the baking powder. So try this easy flapjack recipe without baking powder to see which version you prefer.

 

Flapjack Serving Ideas:

Sweet Toppings

For sweet toppings use the usual jams, honey and whipped cream or vanilla ice cream. Or try a fruit. Berries are especially nice with flapjacks. So are bananas. Whilst your flapjacks are cooling down, quickly fry sliced bananas to caramelize them – using the same frying pan you’ve made the flapjacks in. Butter the warm flapjacks with butter (or peanut butter), top with the fried bananas and drizzle with syrup, maple syrup or honey.

Savoury Toppings

Don’t limit yourself to sweet flapjack toppings, try savoury toppings as well. You can’t go wrong with matches-made-in-heaven such as crispy bacon and maple syrup or crumbled Roquefort cheese and figs.

If you are feeling adventurous try an eggs Benedict version – fry the flapjacks, then lightly toast them, butter and top with bacon and a poached egg drizzled with Hollandaise sauce.

Side note: These easy flapjacks may not fit the definition of a Banting-friendly meal but they are such an iconic South African breakfast that they should be first in line when you are thinking of your cheat day meals.

Easy Flapjack Recipe

 

This easy flapjack recipe makes a sumptuous dessert, breakfast, high tea accompaniment, or cheat day treat. Flapjacks are at their best served whilst still warm. You can make these easy flapjacks without baking powder. This will result in a denser flapjack

  • 3/4 cup cake flour
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 large egg (beaten)
  • 2 Tbsp sugar ((or equivalent sweetener))
  • 1/2 cup milk
  • 1 Tbsp butter (melted)
  • Jam or marmalade (for serving)
  • Whipped cream or vanilla ice cream (optional)
  1. Sift the flour, baking powder and a pinch of salt (about 1 ml) together in a medium mixing bowl. Make a well in the middle.
  2. Beat the egg and sugar together in a smaller mixing bowl and add the milk.
  3. Add the egg and milk mixture to the well in the flour mixture and blend well to form a smooth batter.
  4. Lightly grease the bottom of a heavy-based frying pan with the butter. Heat pan to medium heat.
  5. Blob tablespoons of batter into the pan, about 2cm apart. Fry the flapjacks on medium heat for about 2 minutes on one side or until the top is full of air bubbles – the bottom should be golden brown. Turn and fry for another minute on the other side.
  6. Let them cool slightly and serve with jam, whipped cream or ice cream. Or any of the serving ideas on the recipe page.
